Fast & Easy Vegan Breakfast Recipes

There’s no better way to start your day than with a healthy and energizing plant-based breakfast. Personally, breakfast is my favorite meal of the day, but a lot of vegan breakfast recipes are complicated, and most days I just don’t have the time. Thankfully there are tons of vegan recipes that are fast, easy, and still taste amazing. If you’re morning routine is feeling a little rushed but you still want to enjoy a delicious plant-based breakfast, read on to discover LusOasis’s favorite fast & easy vegan breakfast recipes:

1. Creamy Vegan Oatmeal

This oatmeal recipe might be quick, but it certainly isn’t boring. Our friends over at VeggiesDontBite ( have come up with a truly decadent, creamy vegan oatmeal recipe that’s ready in only 5 minutes!


  • 1/2 cup rolled oats , gluten-free if needed

  • 2/3 cup canned lite coconut milk , or any dairy free milk (see note)

  • 1 tablespoon almond butter , optional (see note)

  • 1 tablespoon maple syrup

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon cinnamon

  • A pinch of sea salt


  • Add the ingredients into a pot over medium low heat and stir until just thickening. About 2-3 minutes.

  • Remove from heat and add to a bowl. Use toppings of choice and enjoy!

2. Avocado Toast

Does avocado on toast count as a real recipe? If you’re like me and you love avocados, it definitely does. If you’ve got 5 minutes and 3 ingredients, get ready for one of the easiest and most satisfying vegan breakfasts you can have.


  • 2 slices of bread (wheat, whole-grain, seeded, or muesli)

  • 1 ripe avocado

  • A pinch of salt and/or your preferred seasoning


  1. Toast bread in an oven or toaster

  2. Top toasted bread with ripe avocado, mash with fork and spread

  3. Top with a pinch of salt and/or your favorite seasoning.

3. Vegan Breakfast Smoothie

If your short on time and looking for the perfect grab-n-go vegan breakfast, nothing beats a delicious fruit smoothie. And thanks to our friends over at TheKitchn (, your vegan breakfast smoothie will not only be delicious, but satisfying and nutritious.


  • 1 cup almond milk

  • 1 ripe banana, sliced

  • 1 cup frozen fruit medley (my favorite is strawberries and banana)

  • 1 tablespoon coconut oil

  • 1-2 tablespoons chia seeds

  • 1 teaspoon powdered ginger


Combine the almond milk, banana, frozen fruit, coconut oil, chia seeds, and powdered ginger in a blender and purée until smooth. Pour into a glass and serve immediately.

4. Vegan Breakfast Sandwich

Feeling extra hungry this morning? Then how about a satisfying vegan breakfast sandwich. We are going to share an especially delicious recipe from The Edgy Veg (, but check your fridge, use your favorite ingredients, and you’ll come up with your very own perfect vegan breakfast.


  • 2 slices of bread, toasted

  • 4 slices of smoked tofu

  • Salt + Pepper (or your preferred seasoning)

  • 1/4 cup healthy greens (I use pea shoots)

  • 1/2 avocado, mashed

  • 2 tomato slices

  • Hot sauce, to taste (optional)


  1. Toast 2 slices of bread.

  2. Slice your avocado, tomato and smoked tofu.

  3. Season smoked tofu with black salt (kala namak), optional

  4. When your bread is toasted, spread your avocado on each slice. Instead of spreading mayo, we're using avocado!

  5. Next, add your lettuce or sprouts and slice of tomato.

  6. Season your tomato with black salt (kala namak), optional.
